MISTURA IS A MEETING OF CULTURES

Many roots.
One generous table.

01 / PERU

A cuisine shaped
by connection.

Peruvian food tells the story of people coming together. Indigenous ingredients and traditions meet Spanish, African, Chinese, Japanese, and Italian influences. At Mistura, that richness is our inspiration: a kitchen where heritage and curiosity share the table.

02 / THE GRILL

A little smoke.
A living tradition.

Anticuchos are a beloved part of Peru’s grilling culture. The tradition carries a deep Afro-Peruvian influence, with marinated skewers cooked over charcoal. Ají panca, garlic, and vinegar are part of that unmistakable flavor language.

GOOD TO KNOW

A few delicious
details.

What is ají panca sauce?

Ají panca is the deep-red Peruvian pepper at the heart of Mistura. Mistura Peruvian Secret Sauce combines it with avocado oil, garlic, red wine vinegar, and spices in a ready-to-use sauce and marinade, inspired by Peru’s marinated, grilled anticucho skewers.

Is it made with avocado oil?

Yes. Our current recipe is made with avocado oil, replacing the canola oil in our earlier recipe. If you have an older bottle, check its label for the ingredients in that batch.

Is Mistura’s ají panca sauce spicy?

It’s flavor first, with a little heat. Expect a tangy, savory profile and a gentle kick from ají panca. Start with a little and add to taste.

How do I use it as a marinade?

Shake well, then use it to marinate chicken or steak, brush onto seafood, or coat vegetables before grilling, roasting, or sautéing. Our cooking videos show Mistura with chicken wings, burgers, and vegetable skewers.

How much Mistura sauce should I use?

It’s up to you—there’s no fixed amount. Shake well and start with a light coating, then add more for a bolder flavor. Use as much or as little as you like and make it your own.

Which bottle size should I choose?

Start with the original 12 fl oz bottle, share a duo, stock up with the six-bottle pantry pack, or choose the 64 fl oz half-gallon. Current prices and availability appear in the size selector. Compare the sizes and shop the sauce.

Is the sauce vegan and gluten free?

Our product label identifies the sauce as vegan, gluten free, and made with no added sugar. Always check your current bottle’s label for ingredient information.

Can I have it shipped or pick it up in San Luis Obispo?

Choose shipping or free restaurant pickup through our secure Shopify checkout. Standard shipping is free for orders $34.99 and up in the contiguous US, including the 64 fl oz half gallon. Pickup is at Mistura, 570 Higuera Street, San Luis Obispo, California. Available fulfillment options and shipping charges are shown at checkout.

Can I order for my restaurant or a special event?

Absolutely. The 64 fl oz size is made for bigger kitchens and gatherings. For wholesale and catering inquiries, get in touch with the Mistura team.
